Frugal Food: Baked Baby Limas in the Slow Cooker

Crock-Pot SCR300SS 3-Quart Round Manual Slow Cooker, Stainless Steel16 oz. dried baby limas, soaked overnight, drained & rinsed
4-5 slices of bacon (or 1/4 pound of cheaper bacon ends), chopped
1 medium onion, chopped
1 1/2 cups sugar
1 1/2 cups water
2 Tablespoons molasses
1 cup ketchup

Place limas, bacon and onion in slow cooker. Next place sugar, water and molasses in a small saucepan and heat over medium heat until dissolved. Pour this liquid over top of bean mixture. Top with ketchup. Cover and cook for 6-8 hours on high or about 12 hours on low. It's helpful to stir the beans occassionally to prevent them from sticking to the sides and to insure that they end up a nice, thick consistency. Enjoy!
